Yummilicious: Vegetable Kurma

Hello there Sugarcubes! :)

I am just home after enrolling for my driving classes :D YAY! 8) I have to prepare for my LL test tomorrow :P LOL! Imagine, all the signs that we never use :o Anyho, I am writing this piece with a bad-ass face :D Aah not really! Oh and the mosquitoes are biting me >.< Good Knight, where are you?!

Before I left, I prepared a delicacy today in my kitchen. Yes. Me. I had prepared the same thing couple of days ago and it became a huge hit :D My siblings loved it! And thus, by popular demand, I prepared it again today 8) And this time, I clicked pictures for you guys. *Aaww I know, I am very sweet :) :) :D*

Lets get on to recipe now, shall we? 8)

Ingredients Required (makes for 5)

Carrot - 250 gms - chopped
Beans - 200 gms - chopped
Potatoes - 150 gms - chopped



Onion - 3 big - finely chopped
Grated coconut - 2 cups
Cashews - 10-12
Chilli - 6-8 (can be varied according to required consistency)
Poppy seeds - fried until golden brown - 2 spoons
Yogurt - 2 cups (can be varied according to required consistency)
Garam Masala - 2 spoons
Vegetable masala - 1 spoon
Salt - as per requirement
Mustard seeds - 1 spoon
Cumin seeds - 1 spoon
Coriander - to garnish

Time required: Including boiling of veggies, 2 hours :P yea, pretty long time ^_^ (Well I am not a frequent Kitchen-er. So pros can do it faster, obviously!)

Hardness level: Average

How to do it? You want me to tell me? Like really? OK! :D *Remember, you asked for it 8)*

For the masala:

1. Grind the grated coconut, chillies, fried poppy seeds and cashews into a thick paste. Do not add too much water as we don't want a runny consistency. You can do this grinding work when the veggies are happily(?!) getting cooked in the pressure cook.


This is how it will look like



1. Chop carrots, beans and potatoes. Boil them with sufficient water until they are soft. Make sure the potatoes are easily mashable.
2. FINELY chop onions. Also add in some turmeric for a nice color.
3. Grate coconut and chop down chillies into very tiny pieces *Awwh so cute :D*
4. Cut eat piece of cashew into 3 smaller bits. *3 or 4 or 5 :P Its just that 3 is very cute :)*
5.Heat oil in a pan, add mustard and cumin seeds and roast them.
6. Fry onions until they are golden brown. Add required amount of salt as it helps faster cooking. You can add a lil more salt than required as the vegetables absorb salt as they get cooked.
7. Once the onions reach golden brown color, add the potatoes, cook for 3 minutes and throw in carrots and beans. *No, don't throw :P*
8. Use the laddle to apply a lil pressure and mash the potatoes. This helps in acquiring a nice flavour.
9. Now add the masala that you prepared while the veggies got baked.
10. Cook for 5 minutes and add garam masala and the vegetable masala.
11. Do not add any extra water, no matter how thick the consistency is.
12. Once you get the nice cooked flavor, add the yogurt.
13. The volume of yogurt can be varied to get the required type :) More the yogurt, runnier the consistency - for rice and rice noodles. Lesser the yogurt, thicker the consistency - for chapati, poori and the like.
14. Cook until the yogurt smell is gone.



15. Garnish with coriander leaves.
16. Serve hot 8)



This dish is very nutritious - the goodness of veggies and yogurt. Its a perfect dish for cranky people that won't eat specific veggies/yogurt. You see the potatoes get mashed, and the yogurt is not seen ;)

  3. aah this is something different...have your heard of something called avial?. It's exactly the same stuff, but sometimes I use tamarind water instead of curd, this can be poured while boiling the vegies. Girl you writing like a pro in kitchen :p...
